    Hi Martin!
    This is Leah, Mike and Asia... We are ready to come back! Unfortunately
    it has taken a year to finally find the time to do this, but fortunately it
    didn't take two I suppose. :) Anyways, we are looking to come back to New
    Camp May 26th which is Friday and leave Monday morning on the 29th. We were
    thrilled to see it open... I'm honestly not sure I remember how to go about
    all the business stuff, so I thought I'd start with an e-mail. I'm so
    excited just e-mailing you about the visit. I'll probably be losing sleep
    over it for the next month until we actually get there! Can't wait
    obviously. So, yeah, I remember last time we sent you a check for half the
    amount I think. Well, let me know if that's right, and anything else we
    might need to know. We were also wondering if while we are up there, we can
    take a look at like 4 of the other camps that we are interested in for
    ourselves, and for a fall visit with my family ,who I know, will just melt
    as I did when they see your land. So, anyways, I guess that is it for now.
    We will be in touch, and let me know what we need to do next. Thank you

    adapted 4/06 from The Classic Italian Cook Book, Marcella Hazan
    Mix together 15.5 can white beans drained (small habichuela, canellini
    or any other not too big white bean) with
    One 6 or 7 oz. can tuna in olive oil (with oil) and
    Thin sliced and finely diced half red bermuda onion and
    2T red wine vinegar.
    Mix well breaking up tuna as desired. Check taste for vinegar.
    Serve on shredded lettuce with sliced tomatoes.

    Salade Nicoise
    adapted from Joy of Cooking 4/06 

    Slice 6 small red new potatoes 1/2 inch thick, simmer 10-15
    minutes until not quite done. Drain.

    Simmer 1 lb. trimmed green beans 15 mins. until not quite done or
    1 lb. whole (not trimmed) asparagus 10-15 mins until not quite done.
    Drain.

    Carefully add 4 eggs to already simmering water (enough to cover eggs)
    and continue simmering 15 min. Crack and remove shells under cold
    water, allow eggs to cool.

    Vinaigrette Dressing
    Measure 1/4 C red wine vinegar, 1T Dijon mustard, 1t white sugar
    in mixing bowl. Add in a slow, steady stream, whisking constantly,
    1/2 C best olive oil.

    Open a 6-7 oz. can of best tuna in olive oil and place tuna with oil
    in the center of a bed of sliced/shredded iceberg lettuce on flat plate.
    Slice eggs in half and arrange eggs, sliced tomatoes and nicoise
    olives (shop for them!) around tuna. Drizzle dressing sparingly around
    edge of plate (not on tuna).

    Arrange green beans/asparagus on second plate, together with cooked
    sliced potatoes. Drizzle dressing generously over all. (If possible
    cover hot vegetables with dressing in a bowl and let stand an hour or
    so. Improves flavor.)

    The rope photo. Was it the notch on the trail to Rattlesnake?
    Or the loooong rope to Ebenezer? I didn't think you got to
    Ebenezer.
    The lady slipper? Pink orchid. Where was it?
    I see photos at Cascade on the road to Placid. Did you
    hike the trail up the mountain there?
    Send me a note saying what you did while you were here.
    And what a great time you had.
    It makes the page more fun for people who see it and don't
    know you.
    Thanks for being my best guests. And for being there at
    Patty's Screen House party. Too bad I didn't get any photos
    of that.

    Hi Martin!!!
    Glad the pics made it to you! I will e-mail you more about the trip as
    soon as possible. My computer at home and at work has been down, but I'm at
    my brother's now and wanted to get the corn pudding recipe to you. Thank
    you so much for all of the wonderful recipes. I can't wait to try them
    all. I just hope they come out as good as yours. Okay, so I will write a
    follow up e-mail sometime this week, but for now, here's the recipe...
    1 stick of softened butter
    3/4 cup of milk
    2 beaten eggs
    1 - 8oz box of corn muffin mix
    1 - 15oz. can of whole corn
    1 - 15oz. can of creamed corn
    Preheat oven to 350. Grease 2 quart baking dish. Combine all ingredients
    and mix well. Smooth butter as much as possible, but it will be a little
    lumpy. Pour in dish and bake 45mins or until knife in center comes out
    clean. Should be golden brown. Let cool for a bit. It thickens up after
    sitting. Enjoy!!
